Cooking times and temperatures

Oven temperatures in Celsius, Fahrenheit and gas marks, and when to start a roast to eat on time, with USDA safe temperatures.

A recipe's temperature is a setting and its time is an estimate. The oven page converts exactly between Celsius, Fahrenheit and gas marks and then says what to set the dial to, since no oven does 176.67 °C. The roast page works backwards from when you want to eat, through resting and cooking, to when the meat goes in, using a minutes-per-weight figure from your own recipe, because published figures disagree. It always shows the USDA safe minimum internal temperature, because temperature, not time, is what makes meat safe to eat, and a thermometer is the only way to know it has been reached.
